Indulgent Caramel Cake Recipe: A Sweet Treat for Any Occasion

Hi, friends! I’m long overdue to share the recipe for my luscious caramel cake that’s guaranteed to please! This cake combines the rich flavors of butter, vanilla, and a touch of lemon with a smooth caramel icing that will leave you craving more. LITERALLY! Chile, my friends have had fights about this cake and they all repeatedly request that I make it! Let's dive into this delectable creation and bring some sweetness to your day!




Ingredients:

For the Cake:

  • 1 Butter Cake Mix

  • 3 tbsp of Sugar

  • 3 tbsp of Swans Down Cake Flour

  • 3 Eggs

  • 1 cup of Milk

  • 1 stick of Unsalted Butter, melted

  • 1 tbsp of Sour Cream

  • 1/4 tsp of Vanilla Extract

  • 1/4 tsp of Lemon Extract

  • 1/4 tsp of Butter Extract

For the Caramel Icing:

  • 1 cup of Sugar

  • 1 stick of Unsalted Butter

  • 1 can of Evaporated Milk


Instructions:

1. Prepare the Cake Batter:

  • Preheat your oven to 350°F (175°C) and grease and flour your cake pans.

  • In a large mixing bowl, combine the butter cake mix, sugar, and Swans Down cake flour.

  • Add the eggs, milk, and melted unsalted butter to the dry ingredients. Mix until well combined.

  • Stir in the sour cream, vanilla extract, lemon extract, and butter extract until the batter is smooth and well blended.

2. Bake the Cake:

  • Pour the batter evenly into the prepared cake pans.

  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

3. Prepare the Caramel Icing:

  • In a medium saucepan, combine the sugar, unsalted butter, and evaporated milk.

  • Cook over medium heat, stirring constantly until the mixture comes to a boil.

  • Reduce the heat and continue to stir, cooking until the mixture thickens to a spreadable consistency (this usually takes about 15 minutes or longer).

  • Remove from heat and allow the icing to cool slightly before using.

4. Assemble the Cake:

  • Once the cake layers are completely cool, place the first layer on your serving plate.

  • Spread a generous amount of caramel icing on top of the first layer.

  • Place the second layer on top and repeat the icing process.

  • Continue until all layers are stacked and frosted.

  • Use the remaining icing to cover the sides of the cake, creating a smooth, even finish.
